Ingredients:
870 g flour
Bag of dry yeast
100 g sugar
200 ml warm water
230 ml cold water
85 g soft butter
1 egg
100 g raisin
60 g dried apricots (cut finely)
80 g cherries
10 carnations
6 pods cardamom
1/4 tea spoons nutmeg
1 ч. The spoon salt
1 yolk
2-3 spoons milk
Instructions:
Mix 200 g flour and yeast, add warm water, make brew. Cover a bowl of brew with a film and put in a warm place for 2 hours.
Pound carnation and grain of cardamom.
2 hours later mix brew with 670g flour, 100 g sugar. Add 230 ml cold water, sugar, salt, egg, butter, cardamom, nutmeg and carnation.
Knead dough in a food processor on slow speed during 8 minutes. Then add dried apricots, raisin and cherry.
Knead dough, put in a bowl, cover with film and put in a warm place for 1 hour.
Lay baking tray with cookery parchment paper, grease with butter. To divide dough in 24 slices, forming rolls. Put rolls on a baking tray, leave no empty space. Cover baking tray with a damp towel and leave for 30 minutes.
For white sweet dough:
4 table spoons flour
1 table spoon sugar
2-3 table spoons water
Mix flour, sugar and water. You should receive liquid, sweet dough.
Make crosswise cuts on rolls with a knife.
Fill in cuts with sweet dough using culinary bag.
Whisk yolk with a small amount of milk and grease rolls.
Heat up oven to 225 degrees. Reduce temperature in an oven up to 180 degrees and bake rolls during 30-40 minutes.
For a syrup:
100 g sugar
50 ml water
Dissolve sugar in water, warming up it a little. Grease ready rolls with the syrup.
Separate rolls one from another when they cool down completely.
